Makes 1 x 9 inch round cake

INGREDIENTS
480 ml water
10g vanilla bean paste
10g white vinegar
75g vegetable, olive or rice bran oil
210g brown sugar
200g caster sugar
70g cocoa powder
330g plain flour, can be substituted for gluten free flour
8g baking powder
8g bicarb soda
4g salt
60g almond meal
200g dark chocolate chunks

METHOD
1. Mix oil and water together in a small saucepan. Add chocolate and mix together until chocolate is melted in. Once the chocolate has melted in, take the saucepan off the stove and pour mix into a large mixing bowl.

2. Add vinegar, sugars and mix further. You can either use a whisk or a stick blender!

3. Add in the rest of the ingredients and whisk together. Easy as that!

4. Pour into a 9 inch baking paper lined cake tin and bake in a preheated oven at 170 degrees, fan forced for 50 minutes - 1 hour. Test with a skewer - it should come out clean if baked.

5. Optional: add frozen berries, cherries, crunchy cocoa nibs or chopped nuts into the cake batter before baking.
