This dark chocolate was made with rum from Belgrave rum distillery, Killik Rum by infusing cocoa nibs for 3 weeks before grinding into a dark, luxurious chocolate. Upon tasting these test batches, I found the rum to really bring out the fruitiness of the Ecuadorian cocoa and paired this one with the softest, sweetest raisins to create a nostalgic rum & raisin chocolate block.
When tasting this chocolate, let it melt on your tongue to let it warm and allow the flavours of rum and delicate, fruity cocoa to really shine.
We only use ethically sourced coffee and cocoa beans. The origin of these cocoa beans are: Hacienda Macondo, Ecuador.
